Much like Fairmont Royal York, Rosewood Winery carries a rich legacy, but in the world of farming. The Roman family, now in its third generation of beekeepers, has been tending to their hives for 92 years. Their journey took a pivotal turn in 2003 when Rosewood planted its first vineyard in Beamsville, nestled along the Niagara Escarpment. This bold step into the world of grape growing and winemaking was a significant milestone for the Roman family, marking the beginning of an exciting new chapter.

Today, Rosewood has become a respected name in Ontario’s wine industry. The winery produces a variety of single varietal and blended wines, each with a story to tell. Guided by a passionate and curious team, Rosewood is committed to creating wines that honour the land and respect the traditions of winemaking. Their approach focuses on crafting wines that are not only delicious but sustainable, natural, and well-made. Rosewood follows a straightforward winemaking philosophy: never do anything to a wine that they wouldn’t proudly share with their consumers.

What does this mean? It means honest and sustainable winemaking. Rosewood’s wines are carefully crafted from the soil up. By focusing on regenerative farming practices and maintaining optimal soil health, they ensure that the vines thrive and produce high-quality grapes. This commitment to sustainability is central to Rosewood’s story-driven approach to winemaking. In both the vineyards and the apiaries, Rosewood uses an integrated pest management (IPM) system, combining modern technology with hand tending to minimize the need for conventional sprays and reduce their carbon footprint. In the winery, efforts to conserve energy and reduce waste water help to further the winery’s sustainable goals.

All of Rosewood’s wines are naturally vegan-friendly, as they do not use any fining agents, and most wines are bottled without filtration. The only addition to the wines (and meads) is sulphur prior to bottling.

For nearly 15 years, Rosewood has been a proud supplier to the Fairmont Royal York, providing the honey for our renowned high tea service. Now, this partnership has evolved into the creation of Momento wines—special wines that capture the essence of Ontario’s bountiful terroir and the shared story between Rosewood and Fairmont Royal York.
