Executive Chef, jW Foster brings a true taste of the world, his award-winning talent and highly-respected food philosophy to Canada’s icon, Fairmont Royal York.

After 15 years of culinary expertise at Fairmont Hotels around the globe, Chef jW returned to Fairmont Royal York's kitchen, where his hotel career began. As the creative culinary director, jW reimaged the hotel’s signature dining venues and launched four new concepts. Visitors and guests can expect seasonal, approachable and relevant menus featuring high quality and sustainable ingredients.

The philosophies of “nose to tail” and “hug your farmer” are part of Chef jW’s vision at Fairmont Royal York along with his value of sustainability and a goal to be 100 per cent Ocean Wise in the next six months. In accordance with Fairmont Hotels & Resorts’ sustainability initiatives, jW is also committed to favouring local food suppliers and seasonal produce, implementing a new program to work closely with Ontario farmers to showcase locally-sourced menu items for the hotel’s new venues.
